Fried Kabab Rolls

Ingredients For Kabab’s:

  • 1/2 Kg Chicken mince
  • 1 tsp All spice
  • 1 tsp Roasted cumin powder
  • 1 tsp Green chilies
  • 1 tsp Salt
  • 1 tbsp Crushed red pepper
  • 1 tbsp Ginger garlic paste
  • 1 tbsp Corn flour
  • 1/2 tsp White pepper
  • 3 tsp Desiccated coconut
  • 2 tbsp Ghee
  • 2 tbsp Almonds blanched
  • 1 1/2 tsp Roasted coriander crushed

Ingredients for Chutney

  • 1 cup Yogurt
  • 1 tsp Green chili ground
  • 1 tsp Chat masala
  • 1/2 tsp Red chili powder
  • 1/4 tsp Salt.

Ingredients for Paratha

  • 2 1/2 cup Flour
  • 1 tbsp Oil
  • 1/2 tsp Salt..
  • to knead Water

Paste to apply inside Paratha:

  • 1 Egg white
  • 2 tbsp Ghee melted
  • 2 tbsp Flour.

Method:

  1. Marinate chicken mince with ground almonds and coconut paste, all spice, roasted cumin powder, crushed
  2. red pepper, white pepper, salt, roasted coriander, ground green chilies, ginger garlic paste, ghee and corn flour.
  3. Mix until well combined.
  4. Put chicken mixture on skewers and shape into kebabs.
  5. Grill or bake for 20 minutes on 180 degree C or until cooked thorough.
  6. Put it in a pan with a burning coal, drop some oil and cover for 1 minute and keep aside to use in Parathas.

To Make the hot and spicy Chutney:

  1. Whisk yogurt, add chili powder, Chat Masala, salt and ground green chilies.
  2. Set aside to serve with Roll.

To Make the Paratha Rolls:

  1. Make 8 balls of the dough, roll each to a saucer size plate.
  2. Spread with prepared paste, roll into a coil and again roll paratha to a quarter plate size.
  3. Shallow fry paratha in frying pan or until crisp and golden brown from both sides.
  4. Fill each paratha with 1 Reshami Kabab and prepared chutney.
  5. Roll it up in butter paper.
  6. Hot And Spicy Reshmi Kabab Roll are ready to serve.
  7. Serve immediately.

Bread Pizza Rolls

Ingredients For Rolls:

  • Bread sliced 6-8

Ingredients For Coating:

  • Eggs 2
  • Bread crumbs as required
  • Oil for fry

Ingredients For Filling:

  • Capsicum chopped ½ cup
  • Boiled chicken 3/4 cup
  • Onion chopped ½ cup
  • Oil 2 tbsp
  • Pizza sauce 2 tbsp
  • Mozzarella cheese ½ cup
  • Green chilies chopped 1
  • Crushed red chilies 1 tsp
  • Pizza seasoning 1 tsp

Ingredients For Cheesy Raita:

  • Yogurt ½ cup
  • Cream cheese 2 tbsp
  • Crushed green chilies 1 tbsp
  • Crushed cumin ½ tsp
  • Salt as required
  • Lemon juice 1 tbsp

Method:

For filling heat oil add onion and green chilies sauté well. Add capsicum, chicken and pizza sauce. Add crushed red chilies and pizza seasoning, cool. Add mozzarella cheese mix well. Cut edges of bread slices roll well. Fill the filling fold well. Seal the edges. Dip in egg coat with bread crumbs fry well. For cheesy raita mix all ingredients of bowl well, serve.

Qeemay walay Naan

Ingredients For Dough:

  • Sugar 1 tsp
  • Yeast 1- 1/2 tsp
  • Flour 3 cups
  • Salt 1 tsp
  • Yogurt 4 tbsp
  • Oil 2 tbsp
  • Warm water as required

For Mince Filling:

  • Beef mince 300gm
  • Chopped onion ½ cup
  • Coriander leaves ½ cup
  • Chopped garlic 1 tbsp
  • Chopped ginger 1 tbsp
  • Green chilies 2-3
  • Crushed cumin 2 tbsp
  • Salt to taste
  • Crushed red chili 1 tsp
  • Crushed coriander 1 tbsp
  • Oil 2 tbsp
  • Yogurt ½ cup
  • Butter as required
  • Green coriander for topping

Method:

Pre heat oven to 180 C. Mix dough ingredients, knead it and leave it to rise. Cook mince with garlic, ginger, crushed cumin, and salt, crushed red chilies and crushed coriander. Now add yogurt and cook well. Add onion, green coriander, green chilies and remove. Now roll dough put mince filling and seal it sides then put butter and bake for 15 minutes. Put butter and coriander in last and serve.

Naan Pizza

Ingredients:

  • Naan 4
  • For the topping:
  • Capsicum (cubed) 1
  • Tomato (Cubed) 2
  • Onion (cubed) 1
  • Green chili slice 3
  • Pizza sauce 1 cup
  • Mozzarella cheese (grated) 1-1/2 cup
  • Crushed red chili 2 tbsp

For The Chicken:

  • Chicken (cubed) 250 grams
  • Red chili powder 1 tsp
  • Garlic paste 1 tsp
  • Ginger paste 1 tsp
  • Salt 1 tsp
  • Oil 6 tbsp
  • Cumin powder 1 tsp
  • Garam masala powder ½ tsp
  • Lemon juice 1 tsp

Method:
For The Chicken:

• In bowl heat oil add chicken and all ingredients well mix then mix oil.
• Then pour the mixture in a pan and cook on high flame for 8 minutes then place a side.
To assemble the pizza:
• Place one naan spread 3 tbsp of pizza sauce on it .sprinkle 5 tbsp of mozzarella cheese on top sprinkle ¼ of the chicken ¼ of all the vegetable and 1 tsp of crushed chili then bake in a preheat oven on 200c for 8 minutes then remove and cut in to 4 pieces then serve hot .

Beef Malai Garlic Rolls

Ingredients For Malai Boti:

  • Undercut whole beef 250 grams
  • Coriander leaves 2 tbsp
  • Green chilies 6 grinded
  • Ginger garlic paste 1 tsp
  • Lemon juice 1 tbsp
  • Raw papaya 1 tbsp
    Cream 2 tbsp
  • Salt 1 tsp
  • Black pepper ½ tsp
  • Roasted and grinded Cumin 1 tsp
  • Red pepper crushed 1 tsp
  • Yogurt ½ cup
  • Oil 2 tbsp
  • Water as required
  • Coal 1 piece
  • Clarified butter as per choice

Ingredients For Garlic Sauce:

  • Mayonnaise ½ cup
  • Cream 1 tbsp
  • Garlic paste ½ tsp
  • Salt & pepper a pinch
  • Onion 1 sliced
  • Mint leaves as required

Ingredients For Puri Paratha:

  • Fine flour 2 cups
  • Salt ½ tsp
  • Egg 1
  • Powder milk 2 tbsp
  • Sugar 1 tbsp
  • Oil ¼ cup
  • Water to knead

METHOD FOR PARATHA:

• Put all the ingredients together and knead the dough into medium consistency.
• Leave it for 1 hour for proofing.
• Make parathas and shallow fry.

METHOD FOR GARLIC SAUCE:

• Mix all the ingredients and apply it on the parathas.

METHOD FOR FILLING:

• Marinate undercut with all the given ingredients for 2 hours.
• Pan f0000ry in ¼ cup oil.
• Give dum of coal.
• Serve it as a filling in the parathas you’ve made before.

Chicken Tikka Naan

Ingredients:

  • Clarified butter 6 tbsp
  • Coal 1
  • Naan batter 1/2 kg

For Naan Batter:

  • Flour 1/2 kg
  • Yeast 2 tbsp
  • Salt 1 tsp
  • Baking soda 1 tbsp
  • Egg 1
  • Oil 4 tbsp
  • Water 1 ½ cup
  • Sugar 2 tbsp
  • Clarified butter 6 tbsp

For Tikka Filling:

  • Chicken (boneless) 125 gm
  • Garlic paste 1 tsp
  • Ginger paste 1 tsp
  • Onion (chopped) 1 (medium)
  • Red chili powder 1 tbsp
  • Turmeric ½ tsp
  • Salt 1 tsp
  • Oil 4 tbsp
  • Cumin powder 1 tsp
  • Lemon juice 1 tbsp

Method:

In a bowl add flour, yeast, salt, egg, oil, baking soda and sugar. Mix well. Add little quantity of water and knead the dough well. Then cover the bowl with a wet cloth so that the yeast can rise. (For summers, keep it for ½ an hour and for winters, keep it for 1 ½ hour). Once the dough has been raised, press well and again leave it.
For tikka filling in a bowl expect onion, add all the ingredients and mix well. Then keep this mixture in “Microwave Oven Mode” for about 4 minutes. Now take it out and add onion, mix well and leave it to chill. Meanwhile, heat the coal on the stove until it becomes dry. Then keep the coal in the middle of the chicken and add 1 tsp oil. Cover it for about 5 minutes. Once the time is up, take it out and mix the chicken well.

For Preheating:

Place 1 glass water in the microwave. Press CONVECTION button once, 110 will come on the screen. Now press CONVECTION button 10 times and bring it to 200 c. Then Press START/ 30 SEC/ CONFIRM. To adjust the time press “^” button until the time is 5 minutes. Now press START/ 30 SEC/ CONFIRM and start preheating.

To Cook Chicken Tikka Naan:

Divide the dought in 6 equal portions. Make small balls of it and spread evenly. Then add 4 tbsp chicken mixture in the center of each dough and spread evenly. Bake the smalls again. Then spread it with and place it on the tawa pan. Place it on an oven rack. Press CONVECTION button once, 110 will come on the screen. Now press CONVECTION button 10 times and bring it to 200 c. Then Press START/ 30 SEC/ CONFIRM. To adjust the time press “^” button until the time is 11 minutes. Now press START/ 30 SEC/ CONFIRM and start cooking. Once the time is up, turn the sides and cook on 200 c CONVECTION for about 4 more minutes. Once the time is up, take it down and add 1 tbsp clarified butter on each naan. Lastly serve hot

Cheesy Qeema(mince) Naan

For Dough Ingredients:

  • Flour 1-1/2 cup
  • Yeast 1 tbsp
  • Yogurt 4 tbsp
  • Baking powder ½ tsp

  • Clarified butter for filling

For Filling Ingredients:

  • Chicken mince boiled 1-1/2 cup
  • Chopped onion 1 large
  • Oil 2 tbsp
  • Green coriander 2 tbsp
  • Seekh kabab masala 1-1/2 tbsp
  • Coal for smoke
  • Chadder cheese ½ cup
  • Mozzarella cheese ¾ cup
  • Egg 1

Method:

All dough ingredients knead and make soft dough and then leave to rise . after this make balls. now heat oil and fry onion. then add chicken boil mince and seekh kabab masala and mix well then roast it. now add green coriander and do the smoke and then cool it. now add chadder cheese ,mozzarella cheese and egg mix .after this roll out and and spread the clarified butter .then fill then mince filling and again make ball and then roll out .now do the marks and then bake in oven when golden then remove and brush with clarified butter .

Cheese Stuffed Naan

Ingredients For Dough

  • Flour 2 ½ cups
  • Salt ½ tsp
  • Sugar 1 tsp
  • Oil ½ cup
  • Egg 1
  • Milk powder 2 tbsp
  • Coriander leaves 2 tbsp
  • Cheddar ½ cup
  • Mozzarella cheese ½ cup
  • Yeast 2 tsp
  • Milk ¼ cup

Method:

Mix all together in a bowl except cheese and knead to soft dough with lukewarm water, leave it to rise for 1 hour in a greased bowl. Now punch down dough, make into three balls, roll slightly, stuff with cheese and re-roll into a nan, bake in a oven for 15 mins, brush with butter and serve immediately with karahi.

Tikka Dinner Rolls

Ingredients For Dough:

  • Flour 2 cups
  • Sugar 1 tbsp
  • Yeast 1 tbsp
  • Salt ½ tsp
  • Lukewarm water to knead

  • Mayonnaise ½ cup
  • Chili sauce 4 tbsp
  • Green chili sauce 4 tbsp

  • Coriander leaves 1 tbsp,

  • Crushed garlic 2tbsp
  • Oregano 1 tsp
  • crushed red pepper 1 tsp
  • mixed herbs ½ tsp
  • chopped coriander 1 tbsp
  • salt pinch

Ingredients For Fillet:

  • Boneless chicken 400 gm
  • Ginger garlic paste 1 tbsp
  • Tikka masala 2 tbsp
  • Salt ¼ tsp
  • Lemon juice 2 tbsp

Method For Dough:

Put all the ingredients in a bowl, mix and knead with lukewarm water to a soft dough, apply some oil on top, cover and leave it to rise for 1 hour.

Method For Fillet:

Marinate chicken with all the given ingredients, grill with 1 tbsp oil until done, give dum of coal and keep aside.

Method For Garlic Butter:

In a bowl mix together ½ cup melted butter, ¼ cup oil, 2tbsp crushed garlic, 1 tsp oregano, 1 tsp crushed red pepper, mixed herbs ½ tsp, chopped coriander 1 tbsp, pinch of salt.

Method:

Mix all together for garlic butter in a bowl and keep aside.
method for spicy mayoIn a bowl add ½ cup mayonnaise, 4 tbsp chili sauce, 4 tbsp green chili sauce, 1 tsp crushed red pepper, salt ¼ tsp, black pepper ¼ tsp, onion finely chopped 1 tbsp, coriander leaves 1 tbsp, mix all well and keep aside.Mozzarella cheese 1 ½ cup Beaten egg 1 or 2 for brushing
To assemble Roll a ball of dough in oblong shape, put a dollop of spicy mayo followed by chicken tikka pieces, then some mozzarella cheese, fold slightly from both sides and roll to wrap it well, brush with beaten egg, bake in a pre-heated oven 200 d for 15 mins, once you remove from oven, brush generously with garlic butter, let it rest for 5 mins, the rolls will absorb the butter, serve it hot.

Pizza Rolls

INGREDIENTS FOR FILLING:

  • Boiled chicken 1 cup
  • Pizza sauce 4 tbsp
  • Mozzarella cheese 3/4 cup
  • Chopped onion 1
  • Red chili flakes 1 tsp
  • Chopped capsicum 1
  • Thyme, oregano 3/4 tsp
  • Oil 2 tbsp
  • Roll sheets as required
  • Oil for frying

METHOD:
Heat oil in a wok, fry chopped onion until golden brown. Also add chopped capsicum, pizza sauce, chicken, red chili flakes, thyme and oregano. Mix well and allow it to cool. Then add mozzarella cheese. Now add the filling in the roll sheets and fry in a hot oil until golden brown.
